Sweet Potato Waffles (dairy, gluten and grain-free)
My son loves these yummy waffles and I do, too! I got the recipe from
http://www.runningtothekitchen.com/sweet-potato-waffles/. I like to serve these with fermented fruit instead of syrup for beneficial bacteria and less sugar.
1 cup almond flour
2 tablespoons coconut flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 medium sweet potato, cooked, skin removed
1 1/2 teaspoons vanilla
2 tablespoons maple syrup
1/2 tablespoons coconut oil
1/3 cup milk of choice
Preheat your waffle iron.
Mix all the dry ingredients in a large bowl (everything through the nutmeg).
Whisk together all the other (wet) ingredients in a medium bowl.
Add the wet ingredients to the dry and mix until combined.
Pour the batter (it will be thick and you'll need to spread it out with a spatula) onto the waffle iron and cook according to the directions on your waffle.
